LAUKI BHAJI...












RECIPE:

Ingr:

  1. Lauki/ Bottle Gourd           1/2 kg
  2. Moong dal                           1 small cup
  3. Onion                                  1
  4. Tomatoes                           3
  5. (tamarind optnl)                 1 tsp
  6. Garlic                                  4 flakes   
  7. Green chillies                     6
  8. Pepper pd                           1 tsp
  9. Coriander pd                      2 tsp
  10. Coriander seeds                1/2 tsp
  11. Turmeric                             1/4 tsp
  12. Hing                                     pinch
  13. Mustard seeds                   1 tsp
  14. Split urad daal                    1/2 tsp 
  15. Chana daal                         1/2 tsp
  16. Curry leaves                       1 sprig
  17. Coriander leaves                1 sprig
  18. Salt to taste  
  19. Oil for tempering
  20. Ghee                                   1 tsp 

Method:

  1. Wash and soak moong dal for half an hour.
  2. Wash and cut all vegetables into big cubes.
  3. In a cooker put all vegetables and ingredients except the tempering ones ( 12 to 17)
  4. Pour 1 cup water, check for taste, close the lid.
  5. Place on medium flame.
  6. After the first whistle, simmer for 5 mts.
  7. Remove and let cool.
  8. Mash the bhaji coarsely as shown above.
  9. Heat oil for tempering and put in hing, mustard seeds.
  10. When they crackle add the daals, curry leaves.
  11. Pour over the bhaji. Sprinkle coriander leaves.
  12. Drizzle a little ghee on top befor serving.
  13. Serve hot with rice or roti.
