RECIPE:
Ingr:
- Lauki/ Bottle Gourd 1/2 kg
- Moong dal 1 small cup
- Onion 1
- Tomatoes 3
- (tamarind optnl) 1 tsp
- Garlic 4 flakes
- Green chillies 6
- Pepper pd 1 tsp
- Coriander pd 2 tsp
- Coriander seeds 1/2 tsp
- Turmeric 1/4 tsp
- Hing pinch
- Mustard seeds 1 tsp
- Split urad daal 1/2 tsp
- Chana daal 1/2 tsp
- Curry leaves 1 sprig
- Coriander leaves 1 sprig
- Salt to taste
- Oil for tempering
- Ghee 1 tsp
Method:
- Wash and soak moong dal for half an hour.
- Wash and cut all vegetables into big cubes.
- In a cooker put all vegetables and ingredients except the tempering ones ( 12 to 17)
- Pour 1 cup water, check for taste, close the lid.
- Place on medium flame.
- After the first whistle, simmer for 5 mts.
- Remove and let cool.
- Mash the bhaji coarsely as shown above.
- Heat oil for tempering and put in hing, mustard seeds.
- When they crackle add the daals, curry leaves.
- Pour over the bhaji. Sprinkle coriander leaves.
- Drizzle a little ghee on top befor serving.
- Serve hot with rice or roti.
