INGR:
French beans 250 gm
Onion 2
Garlic 3 pods
Green chillies 3
Curry leaves a sprig
Besan 1 tbsp
Cumin 1/2 tsp
Mustard 1/2 tsp
Urad dal 1tsp
Chana dal 1 tsp
Hing a pinch
Turmeric a pinch
Salt to taste.
Method:
- Chop beans finely. Cube onions,crush garlic, mince the chillies.
- Heat 2 tbsp of oil in a thick pan and put in hing, cumin, mustard.
- On crackling add dals, crushed garlic, chillies, curry leaves.
- Fry to golden and add onions; saute till transparent.
- Add beans and toss over; saute for 5-6 mts on high flame.
- When all water evaporates, add turmeric, salt and mix well.
- Lower the flame and cook for 5 mts.
- When the beans are cooked 3/4ths, sprinkle with besan to coat the beans all over.
- Cook them to a golden crunchy effect.
- Remove, sprinkle with chopped coriander and serve hot.
Note:
- In the original version, instead of besan the following method is adopted:
- 1/2 cup of soaked channa dal, 3-4 red chillies, 3 garlic pods, curry leaves and salt are ground together coarsely (like for vada)
- They are made into tiny patties and steamed till cooked.
- On cooling, they are crumbled & then added to the beans while cooking.
- Beans of choice, cluster beans, val beans, fench beans etc. can be used.
- Here, I have used besan instead; the taste and effect produced was equally good.
